Fred's tips

A basic white or béchamel sauce is very useful. Flavour it with cheese, mustard, parsley or simply some salt and pepper. It can also be sweetened with a tsp or 2 of sugar and a drop of vanilla extract.

  • 25g Homepride plain flour
  • 25g butter
  • 300ml milk

  • Place all the ingredients in a medium pan over a low to medium heat. Use a balloon whisk to whisk until smooth and thickened – this takes a bit of time but you don’t have to whisk continuously, just regularly to stop it becoming lumpy. Cook gently for a minute or so to help the flavour
